Amethyst is a wine that refreshes the body and mind. It is rich in polyphenols and made without the addition of sulfites.
Polyphenols (procyanidin, resveratrol etc.) are natural antioxidants that fight against the cardio-vascular diseases, neurodegenerative diseases and cancers. A red wine naturally contains ten times more polyphenols than a white wine because these compounds are mainly present in the seeds and the skin of the grape.
The grapes are Grenache, Syrah and Mourvédre, varieties known for their richness in polyphenols.
The grapes come from vineyards grown in high altitude with low yields in difficult soil, to which concentrates polyphenols in the fruit.
The soil is poor. Therefore the vine suffers and has to have its roots deep to find water.
The grapes are hand-picked at the greatest concentration of berry, but before over-ripeness.
Wine in turn liberates speech. We perform a fermentation without oxygen in a long maceration tank to extract the maximum amount of phenolic compounds (tannins, anthocyanins).
After fermentation, we keep the wine on its natural lees (sediment).
We do an early bottling without any filtration operation, bonding or sulfitage to retain all the matter of wine.
The wine will keep for several years thanks to its tannins.
Once bottled, the wine dreams pending its final oxidation and liberation.
